Before Jell-O, a gelatin dessert was a mark of wealth. The gelatin had to be extracted at home from bones and hooves, boiled, strained and clarified over the better part of a day, which meant it belonged to households with servants to do it. It was showpiece food, moulded into towers and served to impress.
 

Pearle Wait was a carpenter in LeRoy, New York, who made cough remedies and laxative teas on the side. In 1897 he took granulated gelatin, which had already been powdered by others but had no flavour at all, and added fruit syrup and sugar. His wife May named it. Neither of them had the money or the experience to sell it, and in 1899 they let the whole thing go — trademark, recipes and name — to a neighbour for $450.
 

The neighbour did no better at first. Orator Woodward became so discouraged that he offered the entire Jell-O business to his own factory superintendent for $35, and the man turned him down. What changed everything was a single advertisement: $336 in the Ladies' Home Journal, declaring Jell-O America's most famous dessert before it was anything of the kind. Sales that year reached a quarter of a million dollars. The company then gave away millions of free recipe books illustrated by Norman Rockwell and Maxfield Parrish, and a dessert that had required a household staff became something anyone could make for ten cents.
 

Wait lived until 1915, long enough to watch the Woodward family become millionaires on it.
