Milton Hershey failed at confectionery twice before it worked. What finally succeeded was caramel, and he sold that business in 1900 for a sum large enough to gamble on something nobody in America had managed: milk chocolate made cheaply enough for ordinary people to buy. He built the factory in rural Pennsylvania, deliberately surrounded by dairy farms, because the whole problem was milk.
 

Then he built a town around it. Streets, houses, schools, a bank, a transport system, a park. He and his wife Catherine had no children, so in 1909 they founded a school for orphaned boys, and a few years later Hershey signed over essentially his entire fortune to it — the company stock included. That trust still holds the controlling shares. The Hershey Company is, in a literal sense, owned by a school, and has been for over a century.
 

The flavour question comes from the milk problem. Before reliable refrigeration, fresh milk could not survive the journey or the summer heat, so Hershey developed a way of partially breaking down the milk fats before use, which stabilises the milk against further spoiling. The method remains a trade secret. The side effect is a faint tang that British palates notice immediately and American ones do not — because for most of a century, that has simply been what chocolate tastes like in the United States.
